After crushing and cold-soaking the fruit for 24-36 hours to enhance extraction, the juice from each vineyard lot was fermented separately in temperature-controlled stainless steel tanks, at warm temperatures, to fully extract color and flavor. Fermentation completed in approximately seven days, but the wines macerated on the skins for an additional three weeks to maximize color and flavor extraction and enhance tannins. The free run juice from each lot was then drained and transferred to French oak barrels, 57% new, for aging. During this period, we frequently taste each lot to monitor its aroma and flavor development, texture, and oak character. In spring, 2006, the lots chosen for our Napa Valley bottling were blended, and subsequently aged an additional 14 months in barrel before bottling in July, 2006.

Cakebread makes excellent Cabernet! The nose is beautiful and full of cedar and eucalyptus. The first sip is somewhat mild, but additional sips give way to black cherries and nice spicy pepper.
I'd buy a bottle now (2007) and cellar it until 2010.

This wine is tearing up the ratings here at WineLog. So Kim and I had to get some to give it a try. We both loved it. 5 stars.
Nice floral nose. Juicy tannins. A little bit of chocolate and raspberry flavor. Very smooth without being watered down. The finish forces a smile on your face.
This wine has 14.2% alcohol but doesn't force itself on you like some other wines with that much happy spice. To contrast things, we tasted this along side Beringer's 2004 Founder's Estate Cabernet Sauvignon. The Beringer wine came in with just 13% alcohol, but had much more "fire" in it and a more obvious alcohol taste.
The main differences you'll notice when trying this wine over some chearper wines are (1) a more complex -and yet blanaces- flavor and (2) a nicer aftertaste.
If you have the cash, drink this wine. It's great for a gift or for a special dinner.

We just got a bottle of this from JJ Buckley wines (http://www.jjbuckley.com) and will be drinking it Monday. That's a bit early for this wine, but I'm excited to get a review back to you guys.
